Blueberry Pancakes

Recipe Serves 4

2 scoops Creamy Vanilla NeoLifeShake
¼ cup coconut water
½ cup blueberries
2 eggs
1 medium banana
½ cup greek yogurt
½ cup cottage cheese
1 tsp baking powder
1 cup oats
2 tbsp coconut flour
1tsp coconut oil (in pan)

1. In a large bowl, combine NeoLifeShake, flour, oats, baking powder, baking soda and the banana.
2. In a large glass measuring cup or another bowl, whisk together yogurt, coconut water, cottage cheese and eggs. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Add blueberries and gently toss to combine.
3. Lightly coat a griddle or nonstick skillet with coconut oil. Scoop 1/3 cup batter for each pancake and cook until bubbles appear on top and the underside is nicely browned; about 2 minutes. Flip and cook pancakes on the other side, about 1-2 minutes longer.
4. Serve immediately with agave or maple syrup and enjoy!
